As a busy mom I am always on the hunt for healthy on the go snacks that can also be a little treat. Lucky for me, Jamba Juice has introduced the perfect flavor for a little “bliss-full” treat.

I absolutely loved the pomegranate antioxidant smoothie. It was so flavorful and hit that sweet spot that I needed for a little pick me up! The best part is is that I didn’t feel guilty since I know how packed full of nutrients it is. I don’t know about you but a guilt free treat is a win in my book! And PS if you can’t tell Tripp loved it too! He was trying to steal it from me the whole time!

Since International Day of Happiness falls this month I thought what a perfect time to bring a little Happiness to someone else and giveaway a treat that brings me such happiness!

#100daysofhappiness: Day 14

Seems like weekends get the best of me and I remember to take a picture but not to post! Last night my MOL (shout out to BARB who actually reads this blog), FOL and my Aunt and Uncle in law (is that even what they are called?) came to our house for dinner.

Since Mark is working like crazy I told him I would prepare dinner.  I didn’t want to try anything that I was uncomfortable with so I went with one of Mark’s favorite things, BACON WRAPPED CHICKEN!

Here is the recipe I just messed a few together I found on Pinterest:

Chicken Breast

Red/orange/yellow/green peppers (Whichever you prefer or are on sale)

Onion

Cheddar Cheese (I prefer slicing a block)

Tooth picks

Baking Sheet

BACON

Preheat over to 350 degrees.  Cut peppers (you need about 3 slivers per chicken). Cut onion (we LOVE onion so I unusually load it with big chucks).  Cut cheese (1-2 slices per chicken depending on size).  Butterfly Chicken Breast.  Open the breast and load with peppers, onions and cheese.  Fold over.  Begin to wrap bacon around the chicken and hold in place with toothpick.  It typically takes me 2-3 slices of bacon depending on how large the breast is!  Once wrapped place on baking sheet.  Once you have all the breast completed place in oven for 30-40 mins.

I paired this chicken with green beans and mashed potatoes! SO YUMMY! Of course I made the dessert I talked about in a TASTY TREATS blog post.

The food was a hit and everyone left with full bellies!

Tasty Treats: Apple Nachos

Well hello everyone! This week has just FLOWN by and I can’t believe tomorrow is Friday!

Basically right now I am living like a single lady [Hubby is a CPA and is in BUSY season already!] Last year another wife and myself started doing Thursday night dates so we could get some good chat time in!  Well she had a BABY a few weeks ago! So one of my other girlfriends and I decided to bring her over some dinner and have a chat sessions [and of course squeeze and love on the new baby!]

So I took charge of dessert and had seen this pin!  But I wanted to do it my own way…. so off I went to the store.

Here is what I put together:

Marshmallows (small)

Milk Chocolate Chi-s

Granny Smith Apples

Ketchup/ Mustard/Condiment Bottle

All I did was cut up the apples.  Layer the apples flat in a pyrex cake container and sprinkled a handful of chocolate chips and a handful of marshmallows across.  Then melt peanut butter in the condiment container and squeezed over the first layer. Then I repeated the steps for a second layer.

Here was the final product:

Such a hit and SO easy.  All together I think it took me maybe 10 minutes and 8 minutes was cutting the apples!
