Soli Meal Delivery Review

I don’t know about you all but as a work at home mom I am ALWAYS looking for easy but healthy meal solutions.  I can easily get burnt out making the same few things over and over again.

When Soli came across my radar I was so intrigued about their program. They kindly sent me over several different meals and snacks to try out and share with y’all!

I love that Soli provides healthy food that is convenient so you can stay on track with your personal nutrition goals. I really love how the meals are color coded by protein. They also offer dietary options for those who may need/want them (like carb conscious, diary free, gluten free, paleo, sodium conscious, spicy, vegan, vegetarian and whole30).

I’m obsessed with how easy these containers are to grab and go.  Easy heating instructions and the nutritional information is easy to find! My favorite thing is that this is a meal service with so little ‘prep’ involved. You can have your meal ready to eat in less than 5 minutes.  Which is PERFECT for a busy mom!

Soli has weekly delivery options available.  Pick Monday or Thursday to ship. They have a three day lead time to ensure fresh shipping! Also, to ensure freshness, they only ship to locations that their shipping partners can reach within one to two days.

If you are loving what you are hearing head over to Soli and use discount code Gabbingginger for $20 off.

PS So far my favorites are the baked ziti,  brownies and the blueberry stack pack!

XOXO,

Gabbing Ginger

Banana Cinnamon Muffins

I got bit by the baking bug and had 2 very ripe bananas so…. I found THIS recipe on BettyCrocker.com and wanted to add some Hershey’s Kisses [I used the caramel filled}.  Made some tweaks and they turned out great!

Image

Ingredients

2/3 cup sugar
1/2 cup vegetable oil
2 eggs
2/3 cup mashed very ripe bananas (2 small)
1 teaspoon vanilla
1 2/3 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
24 Hershey Kisses

Topping

1/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 cup butter or margarine, melted

Directions

  • 1 Heat oven to 375°F. Grease bottoms only of 12 regular-size muffin cups with shortening or spray, or line with paper baking cups. [I split to 24 for smaller muffins and to incorporate the hershey’s kisses.]
  • 2 In medium bowl, beat 2/3 cup sugar, the oil and eggs with wire whisk. Stir in bananas and vanilla. Stir in remaining muffin ingredients just until moistened. Divide batter evenly among muffin cups.
  • 3 Push Hershey Kisses into batter about halfway down.
  • Bake 17 to 21 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan to cooling rack.
  • In small bowl, mix 1/4 cup sugar and 1/2 teaspoon cinnamon. Dip muffin tops into melted butter, then into cinnamon-sugar. Serve warm.

30 for 30 football favorites countdown: Crazy for Queso

During a tailgate the best way to make queso is in a crock pot.  My favorite is the Famous Queso Dip!

1 lb.  (16 oz.) VELVEETA®, cut into 1/2-inch cubes
1can  (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained
Dice VELVEETA® into cubes and pour RO*TEL into crock pot with cubes into crock pot.  Turn on high and let melt.  Stir occasionally.  Turn down to medium/low once completely melted.

30 for 30 football favorites countdown: Breakfast of Champs

Tailgates can sometimes start extra early so you definitely need to eat the most important meal of the day!  One of my favorites to make is biscuits and gravy! It is easy and everyone loves it!

breakfast

Pillsbury Grand Flaky Layers- 1 can

Pioneer Brand Gravy Mix- Country Sausage Flavor

Jimmy Dean Reduced Fat Sausage

Preheat oven and bake to directions the Pillsbury Grand calls for.  While those are baking start the prep for the gravy.  Boil the water and follow directions as Pioneer Brand states.  At the same time begin browning the sausage in skillet.  Once browned stir into gravy mix. Then get biscuits out and serve!

30 FOR 30: Football Favorites Countdown- Yeti Cooler

One of the most important tasks at tailgating is keeping the beer cold! If you haven’t discovered Yeti Coolers you are missing out! Now they are pricey for a cooler but TOTALLY worth it!  We LOVE our Yeti’s and they really do keep everything crazy cold for LONG periods of time!   They come in ALL sizes.  Here is the website says:

“YETI Coolers are built to be indestructible and keep ice for days.  Built for going toe-to-toe with hungry grizzlies.  Built for the prepared.  Built for better Monday morning water cooler talk.  Built for the long haul.  Built for the wild.”

I mean if it can handle grizzlies it can handle us tailgaters!
