Banana Cinnamon Muffins

I got bit by the baking bug and had 2 very ripe bananas so…. I found THIS recipe on BettyCrocker.com and wanted to add some Hershey’s Kisses [I used the caramel filled}.  Made some tweaks and they turned out great!

Image

Ingredients

2/3 cup sugar
1/2 cup vegetable oil
2 eggs
2/3 cup mashed very ripe bananas (2 small)
1 teaspoon vanilla
1 2/3 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
24 Hershey Kisses

Topping

1/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 cup butter or margarine, melted

Directions

  • 1 Heat oven to 375°F. Grease bottoms only of 12 regular-size muffin cups with shortening or spray, or line with paper baking cups. [I split to 24 for smaller muffins and to incorporate the hershey’s kisses.]
  • 2 In medium bowl, beat 2/3 cup sugar, the oil and eggs with wire whisk. Stir in bananas and vanilla. Stir in remaining muffin ingredients just until moistened. Divide batter evenly among muffin cups.
  • 3 Push Hershey Kisses into batter about halfway down.
  • Bake 17 to 21 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan to cooling rack.
  • In small bowl, mix 1/4 cup sugar and 1/2 teaspoon cinnamon. Dip muffin tops into melted butter, then into cinnamon-sugar. Serve warm.

30 for 30 football favorites countdown: Breakfast of Champs

Tailgates can sometimes start extra early so you definitely need to eat the most important meal of the day!  One of my favorites to make is biscuits and gravy! It is easy and everyone loves it!

Pillsbury Grand Flaky Layers- 1 can

Pioneer Brand Gravy Mix- Country Sausage Flavor

Jimmy Dean Reduced Fat Sausage

Preheat oven and bake to directions the Pillsbury Grand calls for.  While those are baking start the prep for the gravy.  Boil the water and follow directions as Pioneer Brand states.  At the same time begin browning the sausage in skillet.  Once browned stir into gravy mix. Then get biscuits out and serve!

#100daysofhappiness: Days 85, 86, 87, 88, 89, & 90

It is that time again to update the good ole #100days of happiness!  After this adventure ends I will pick back up on more unique posts!

Over the weekend my oldest friend came to town for a visit! I have known Kate for over 21 years… sheeeeeeesh!  You should follow her blog Prairie Yuppie! She owns a ridiculously cute boutique in Stillwater, OK and competes in beauty pageants!  While she was here we ventured around Fort Worth, and  went to the Colonial! The quote below is our friendship… we could sit for hours and not say anything and be comfortable…. BUT lord knows we can chats each others heads off too!

True Friendship comes when the silence between two people is comfortable- David Tyson Gentry

Colonial was so fun! We had access to a few tents and the weather was perfect! We got to spend time with old friends and new friends and it was FABULOUS!

Belli [Facewash]-  No, I am not pregnant but I have been having TERRIBLE breakouts but I don’t want to start medicine or anything ridiculously harsh on my skin.  SO I have been searching for things that will help my face.  I LOVE the philosophy clear line but wanted to try something new.  I found rave reviews for this from NON pregnant people so I thought I would give it a whirl! And I LOVE it.  Doesn’t smell and really gives you the fresh and clean feel! It really has reduced my break outs… right now I only have one pimple…. a month ago i had so many I couldn’t even count them all!

Cherry Coke Zero is a serious problem I have.  I love it and it really does help curb my coke cravings especially in the summer when I crave it even more! Cue Rascal Flatts singing Mayberry.  I don’t drink it everyday but I like having it around when I am have a sweet craving!  SO YUMMY!

Kate and I decided to treat Mark to homemade breakfast after he put up with us hung out with us all weekend.  Omelets and bacon… can’t.beat.that.

Also, I have gotten to take advantage of working from home and some amazing weather by laying out with my laptop in hand!  I LOVE it! Stay tuned for a blog post about the highs and lows of working from home!  Should be funny…. at least for me.

Hope y’all had a fabulous weekend!

#100daysofhappiness: Day 69, 70, 71

I love my Celestial Green Tea it is definitely a great afternoon pick me up! Can’t help but love my animal print mug!

I also got to attend a fabulous YMCA breakfast event called the “Chairs Roundtable Breakfast” on behalf of the Westside YMCA. My husband is on the board but I love getting to support such a wonderful cause in our community!  They have some BIG things happening! Plus, the breakfast was AMAZING!

The other item I love and that makes me happy are thank you notes! I love giving and receiving them! I was just talking to my MIL (shout out to Bard she reads this :)) about how many people do not write these and how it makes us so angry sometimes! People don’t even acknowledge gifts these days! I try to take the time to quickly write them whether I receive a gift, go to a dinner or just want to send a quick thanks for a good deed! So many people who surround me go above and beyond what is expected and I want them to know I appreciate it.  I will get off my soap box now!

#100daysofhappiness: Day 22

Happy St. Paddy’s Day! I have been trying to incorporate more healthy food into my diet.  Over the last week I have been drinking “green smoothies”. How fitting to have my green smoothie as my #100daysofhappiness on a holiday that is filled with green!

Basically I have been taking a normal smoothie and adding spinach and honey to it!  It does have a different taste but it is still sweet and yummy! I have been able to add more spinach every time… so for those of you afraid start small and build up!

Todays combo [I don’t measure what I do so these are estimates]:

1-2 cups spinach

One Teaspoon honey

Two cut strawberries

1 Cup of frozen mango and pineapple

1/2-1 cup milk

I use a Ninja and I LOVE it!

Fort Worth Favorites

Oklahoma holds such a special place in my heart but I really have fallen in love with Fort Worth, TX.  Here are a few of my favorite things! Somethings may not be Fort Worth ONLY but I didn’t experience them until I moved here!

Screen Shot 2014-03-16 at 5.37.31 PM

Food

Joe T. Garcias– Their marge will knock you off your feet! Such a great patio too! They do have a limited menu but the food is great!

The Original– Typical mexican food but it is a Fort Worth staple! We have tried most menu items and they have all be yummy!

Lucille’s– LOVE their brunch but their seafood is AMAZING too!

Old South– A fort worth staple open 24 hrs! GERMAN PANCAKES for the WIN!

The Woodshed– Outdoor seating with unique smokehouse choices.

RailHead– Texas BBQ at it’s best!

Winslow’s– Wine and cheese… can’t beat the cool atmosphere!

Hoffbrau- Steak, Steak, Steak… YUMMYY and great prices!

Swiss Pastry Shop– Black Forest Cake is AMAZING… not like a typical one but it will rock your world people.

Entertainment

Billy Bob’s– Country music at its best! Have been to several converts and we love the atmosphere [very intimate]! At an Eli Young Band concert we caught a guitar pick and drum stick!

Movie Tavern– Drinking and movie… unlike the place in Oklahoma the whole theater can drink as long as you are 21! Ticket prices are reasonable too!

Concerts in the Garden– Summer time, music, food and drink.  The FW Symphony has different themes and collaborations so you can attend for the music you love most!

Four Day Weekend– Similar to “Whose Line is it Anyway”, this 4 man group will keep you laughing!

Colonial– Caddy races, drinking and great scenery!

Shopping

Neiman Marcus– Top notch designers and several great sales throughout the year!

Apricot Lane– CUTE boutique. I am OBSESSED with their fleece lined leggings.

Health/Beauty

Smart Barre Class– LOVE these classes and can’t wait to see my body change!

Zeeba– Meredith is my girl and helps keep my hair looking fab.

I will continue to add to this list! What Fort Worth Places do you feel I missed or maybe that I should try?
